Why don't the Greeks do the same thing that Iceland did and fart in the general direction of the Banksters?

Because they can't. Iceland isn't a member of the EU. It has it's own back. The Greeks are under the thumb of the European Central Bank. If they were to do what you suggested they would probably be expelled from the EU which could cause even more chaos.
